Okay reddit I’m stumped. I’ve been baking sourdough for sometime now, I had a pretty awesome bread program at my restaurant in Colorado. Recently I moved to central Texas and have begun to attempt making bread here. I’ve run into a problem with the starter not “starting”.
I’m on day 15 of my second starter and there is still little to no yeast activity. But the bacteria populations are thriving, turning the starter acidic in under 8 hours. I said second starter because I’ve been troubleshooting the starter for over a month with out any success.
Some things I’ve done to troubleshoot:

- changing the flour ratios and types. I fed it AP, bread flour, dark rye and various combinations of them
- changing seed amount. Typically I do 50g but I’ve gone as low as 10 and as high as 100g
- stopped using tap water. The city treats its water with chloramine so I’ve switched to bottled spring water
- increased oxygen flow. Traditionally lactobacillus is an oxygen tolerant anaerobe so increasing oxygen might decrease presence since they’re not downright tolerant.
- Decreased oxygen flow. Yeast are primarily anaerobic so perhaps decreased oxygen would increase production.
- changing temperature. The final mix of the starter is about 72-75 but I’ve gone colder and placed the starter in warmer areas as well to no avail.
Anybody have any other ideas to what could be going on/ways forward?

Anyone else have experience with these trees from this online vendor?
I (Colorado, zone 5a/b) ordered four American persimmon bare root saplings from Gurneys back in March, and when they arrived I was surprised to see the taproots had clearly been cut. I called Gurneys and spoke to one of their tree specialists who assured me that this was the root pruning version of topping the header, and the trees will grow nice strong lateral roots instead and do just fine. I was still a bit doubtful but the damage was already done so I planted the poor things in nice big holes and have watered them weekly. Two of the saplings started to leaf out a couple weeks ago, but the other two just look dead.
My questions: I hear persimmons take a while to get going in the spring, but how much longer should I wait before giving up on the two that appear dormant/dead? If those two are dead, what are the chances that their cut taproots were part of the problem? Would it be worth it to request replacements from Gurneys that will ALSO have cut taproots, or should I try to buy replacement trees elsewhere? Are the two trees that successfully leafed out this spring likely to thrive, or will their growth be stunted due to their cut taproots? Any recommendations for where I could source better trees if I end up needing to replace these?
